Eat: No Bake Chocolate Coconut Cookies

I love me a good Mounds bar. Almond Joy will do in a pinch, but, pluck out those almonds and give me that dark chocolate, is what I say!

These cookies are very reminiscent of the Mounds bar. And they come together really quickly with only a few ingredients.


And there's no better way to enjoy a cookie on a hot day then to not have to turn on the oven to get it. :)

Now, these cookies may never win a beauty pageant (isn't that the way with no bakes?), but they are tasty. Besides, they don't do a lot of sitting around anyway. I ate three just writing this post. I mean...my sister....ate those cookies.... :)


No Bake Chocolate Coconut Cookies
from For The Love of Cooking

1/4 cup of milk
1/4 cup of butter
3/4 cup of sugar
3 tbsp cocoa powder
1/2 tsp vanilla
1 1/2 cups of quick cooking oats
3/4 cup of coconut




Bring the milk, butter, sugar and cocoa powder to boil for 2 minutes. 

Remove from heat and add the vanilla, oatmeal and coconut; mix thoroughly.


Drop spoonfuls onto a silpat mat or wax paper and wait until dry. Enjoy.
